Pancake Cereal!

Pancake cereal is trending on TikTok as the newest, most delicious breakfast recipe! Rather than enjoying a large stack of fluffy pancakes, pancake cereal involves making bite-sized pancakes that are enjoyed in a bowl, topped with whichever ingredients you fancy. Some choose to pour a splash of milk over the top while others enjoy them topped with a knob of butter and a splash of maple syrup.
Vanessa, one of our naturopaths here at Australian NaturalCare, took on the TikTok ‘Pancake Cereal Challenge’ and gave the recipe a healthy spin. Here’s her recipe:
Ingredients:
For the pancakes:
- ¾ cup rolled oats
- 1 ripe banana, sliced
- 1 tsp. vanilla extract
- 1 tsp. ground cinnamon
- 1 egg
- 1 tsp. baking powder
- ¼ cup milk of your choice
- Coconut oil for cooking
For the berry coulis:
- ½ cup fresh or frozen mixed berries
- 1 tbsp. maple syrup (plus extra to serve)
- Juice of half an orange
- ½ tsp. ground cinnamon
Method:
- In a blender, whizz up all the ingredients for the pancakes (except for the coconut oil) until a smooth batter has formed
- Place a large fry pan on the stove at medium heat and grease with some coconut oil
- Once the coconut oil has melted, pour teaspoonfuls of the pancake batter in the frying pan
- Use tongs to flip the pancakes over once they are bubbling on top and golden on the edges, then cook until the underside is golden
- While the pancakes are frying, add all the berry coulis ingredients in a small saucepan over medium heat and simmer, stirring occasionally, until the liquid has reduced and the berries are soft and mushy
- Serve the pancake cereal in a bowl topped with the berry coulis and an extra glug of maple syrup
(Serves 2-3 people, depending on how hungry you are!)
