It isn’t Christmas without delicious gingerbread cookies! This recipe is both fun and easy to make. The whole family will love them!
Ingredients:
- 1.5 cups rolled oats
- ¼ tsp. bicarb soda
- ¼ cup butter, melted
- 2 tbsp. milk
- ¼ cup maple syrup
- ½ tsp of each of the following ground spices: cinnamon, ginger, mixed spice, nutmeg
Method:
- Preheat your oven to 150ᵒC and line a flat tray with baking paper. In a blender, whiz up the oats until they form a fine flour
- Add the butter, milk and maple syrup to a blender or food processor and mix until well combined. In a bowl, whisk the flour, spices and bicarb together
- Using a spatula, gently mix the wet ingredients with the dry ingredients until a dough forms
- Roll the dough into a ball and refrigerate for 30 mins
- Once refrigerated, roll out the dough on a clean surface to about 3mm in thickness and then cut using a cookie cutter
- Place your cookies on the prepared tray and bake for 10 mins or until golden
