This delightful salad boasts a vibrant array of colours, offering a unique twist on the classic caprese. Enhance it into a complete meal by adding grilled fish, chicken or your preferred protein.

Ingredients:
- ΒΌ cup white balsamic vinegar
- ΒΌ cup extra-virgin olive oil
- ΒΌ teaspoon salt
- ΒΌ teaspoon ground pepper
- 2 large carrots, diced
- 1 large yellow capsicum, diced
- 2 cups chopped kale (or baby spinach)
- 1ΒΌ cups chopped red cabbage
- 1 cup quartered grape tomatoes
- 1 cup mozzarella pearls (or chopped mozzarella)
- Β½ cup thinly sliced fresh basil
- 2 spring onions, sliced
Directions:
- Whisk vinegar, oil, salt and pepper in a large bowl.
- Add carrots, capsicum, kale (or baby spinach), cabbage, tomatoes, mozzarella, basil and spring onions. Toss to coat.
