    Eating a variety of colourful vegetables is a simple way to support overall wellbeing. This vibrant chopped salad combines fresh ingredients rich in fibre and nutrients, making it an easy and delicious addition to a balanced diet.

    This delightful salad boasts a vibrant array of colours, offering a unique twist on the classic caprese. Enhance it into a complete meal by adding grilled fish, chicken or your preferred protein.

    Servings: 8 people

    Ingredients:

    • ΒΌ cup white balsamic vinegar
    • ΒΌ cup extra-virgin olive oil
    • ΒΌ teaspoon salt
    • ΒΌ teaspoon ground pepper
    • 2 large carrots, diced
    • 1 large yellow capsicum, diced
    • 2 cups chopped kale (or baby spinach)
    • 1ΒΌ cups chopped red cabbage
    • 1 cup quartered grape tomatoes
    • 1 cup mozzarella pearls (or chopped mozzarella)
    • Β½ cup thinly sliced fresh basil
    • 2 spring onions, sliced

    Directions:

    1. Whisk vinegar, oil, salt and pepper in a large bowl.
    2. Add carrots, capsicum, kale (or baby spinach), cabbage, tomatoes, mozzarella, basil and spring onions. Toss to coat.
